I tried it; We liked it!

Not long ago I pinned this recipe to my "Home Cookin'" Board.  When we moved from Little Rock to Hot Springs Village to give retirement another chance, we resolved to try a new menu/recipe at least once a week.  






This egg dish was the first attempt.  We put it in our 'keeper' file.  It was quick and easy.  I did find that my oven heated on the high side.

The eggs were more like soft-boiled instead of runny.  We liked them as they were so I am going to continue to use 12 minutes for the baking time.  Also, my muffin tin has six cups for large muffins so I used two pieces of ham.  The ham seemed skimpy. Next time I'll use three pieces.
